Comfort food can mean a lot of different things depending on the person you talk to. Is it what your mom gave you when you were sick? Is it the dish you ate everything Thanksgiving? Is it the dessert you indulge in from that little shop when you go home? For me, comfort food is embodied in one dish: grilled cheese.

I know, I know - grilled cheese is a basic dish. At least, it starts off that way. When you add in a few extra elements though, you take that ooey gooey awesomeness to perfection. If your significant other breaks your heart, if you fail a test, or if it’s just too rainy to go outside, this should be your go-to meal.

While you’re shopping, be sure to grab bread, cheese slices, bacon, and soup. I am typically a white bread kind of girl, but almost any loaf you can find will work. I would stay away from the bakery breads, like French or Italian, because they just don’t grill as nicely. Grab the cheese of your preference - American and cheddar are always nice, but provolone can be a cool twist. So long as it will melt, it’ll be a lovely addition to your sandwich.

If you’re feeling really crazy, go for two types of cheese and mix it up. Turkey bacon is a slightly healthier option for your dish, but if I really want to feel comforted, I go all out and get pork bacon; it’s what brings me back home. Soup is really anything you like. I prefer cream-based soups, but tomato soup is definitely a popular companion for grilled cheese.

When you’re set to get shaking, get your bacon in a skillet. You only need to make three or four pieces for your sandwich. You can flip them with a fork until they get nice and crispy. When the bacon is all done, place your bacon to the side briefly. In the leftover grease, layer a piece of bread, a slice of cheese, bacon strips, another slice of cheese, and the top piece of bread. Flip your sandwich on the stove until the cheese is perfectly melted and the bread is browned.

As for your soup, put it in a microwaveable bowl and read the directions. It should only take if a few minutes to heat up and be the perfect sidekick for your superhero sandwich. If you need a dish to save the day from disaster, then this grilled cheese is the way to go.
