Ingredients:

  • 1 1/2 tsp. olive oil
  • 1 lb ground turkey
  • 1 onion, chopped
  • 1 cup water
  • 1 (28 oz.) can canned crushed tomatoes
  • 1 (16 oz.) can canned kidney beans
  • 1 (16 oz.) can canned black beans
  • 1 (16 oz.) can chili beans
  • 1 (5 oz.) can corn
  • 1 packet taco seasoning
  • 1/2 tsp. salt
  • 1/2 tsp. ground black pepper
  • 1 tbsp. garlic, minced

Directions:

1. Heat the oil in a large pot over medium heat. Place ground turkey in the pot and cook evenly. Drain off excess fat from turkey in colander over sink. Return to pot, stir in onion and garlic and cook until tender.

2. Drain and rinse beans in colander under the faucet. Add beans, tomatoes, corn and water to the turkey and onion. Season with salt and pepper and taco seasoning mix.

3. Reduce heat to low and simmer for 30 minutes. Serve with tortilla chips or shredded cheddar cheese.
