All-day breakfast restaurant Fresh Corner to open near campus

By next week, students will have a new healthy breakfast option near campus.

Fresh Corner, located at 16 NW 18th St. — where Cheese Daddy once operated — will offer an all-day breakfast menu from about 8 a.m. to 5 p.m., with the possibility of late-night hours, said co-owner Egan Herda, a Santa Fe College sociology junior.

The menu will include options like chicken and waffles, mini bagels with smoked salmon and avocado toast, Herda said, adding that there will be gluten-free and vegan options available.

Buoyed by the national healthy-foods trend, the restaurant will hopefully find a consumer base with students looking for quick, healthy options before class, Herda said.

“It will be a good addition to the Midtown area,” the 26-year-old said.

Herda said he hopes to open the restaurant before Saturday’s football game, but that it will definitely be open by sometime next week.

Herda, whose family owns a farm in Micanopy and a catering business, began eating healthy about three years ago following an open-heart surgery. Herda also owns a meal plan delivery service called The Real Meal. He said people often complained they didn’t have quick and healthy places to go for breakfast.

“I’m expecting a good reaction,” he said.

Blair DeCrispino, a UF accounting senior, said the restaurant’s nutritious options will be a perfect addition to her morning routine.

“I go to the gym very early in the morning, and I am always looking for a healthy breakfast to eat after,” the 21-year-old said.
