UF's Food Science and Human Nutrition Department held its annual Successful Ice Cream Retailing workshop Friday through Monday for ice cream entrepreneurs.
The course, taught by ice cream shop managers and owners from around the country, included seminars on marketing issues, food safety and the differences between various frozen desserts.
Rebecca Matta, the department's program assistant, said participants paid between $745 and $795 to attend the motivational workshop. The event sold out by the second day, Matta said.
She said the course is not meant to promote poor eating habits.
"All nutrition doesn't have to be broccoli," she said.
"There's a place for everything in moderation."
Ronald Schmidt, a food science professor, said ice cream is a good source of protein.
It's important to "balance your foods," Schmidt said.
Although she doesn't recommend making it a big part of your diet, Matta said moderate ice cream consumption is OK.
"There's a place for desserts in our culture," Matta said.
